Cinnamon-Nutmeg Banana Bread

Ingredients

  • 1½ cups all-purpose flour
  • 1 cup quick cooking oats
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt (optional)
  • ¼ teaspoon nutmeg
  • 3 very ripe bananas, mashed or 1½ cups total
  • 1/3 cup low-fat buttermilk
  • ½ cup egg substitutes or 2 eggs
  • 1/3 cup packed brown sugar
  • 3 tablespoons canola oil
  • 2 teaspoons vanilla extract
  • Vegetable cooking spray
  • ¼ cup chopped pecans

Directions

  1. Preheat oven to 350 degrees. In a medium bowl stir together flour, oats, cinnamon, baking soda, salt and nutmeg.
  2. Combine bananas, buttermilk, eggs, brown sugar, canola oil and vanilla in another bowl. Stir until well-blended. Add to flour mixture and stir until just blended. Do not over mix. Batter will be very thick.
  3. Coat a 9x5-inch nonstick loaf pan with cooking spray. Add batter and top with pecans. Bake 50 minutes or until a wooden pick inserted in center comes out clean. Let stand 10 minutes before removing from pan. Place on wire rack to cool completely for peak flavors. Makes 12 slices.
