Hummus and Veggie Roll-Ups

Ingredients
- 2 whole-grain flour tortilla
- ½ cup hummus
- ½ cup baby spinach leaves, sliced into strips
- ¼ cup finely grated fresh carrots
- ¼ cup thinly sliced roasted red peppers
Directions
- Spread hummus evenly between the two tortillas.
- Top the hummus with spinach leaves, carrots and roasted peppers.
- Roll-up tightly. Cut into halves and wrap tightly in plastic wrap. Keep in refrigerator until time to pack into lunch boxes.
Makes 2 servings.
