- 1/3 cup orange juice
- 1/3 cup red wine vinegar
- ¼ cup vegetable oil
- 2 tablespoons sugar
- 1 teaspoon orange zest
- 8 cups baby spinach
- 2 medium cucumbers, peeled and thinly sliced
- 2 (11-ounce) cans mandarin oranges, drained
- 1 cup walnut pieces
- ¼ cup green onion slices
- In small bowl whisk together orange juice, vinegar, oil, sugar and zest until well blended. Set aside.
- In serving bowl toss together spinach, cucumbers, oranges, walnuts and green onions. Add the orange juice dressing; toss together to mix. Serve immediately.
