Pesto Mashed Potatoes


  • 1 lb. cubed and peeled Yukon gold potatoes – about 2 ½ cups
  • ½ cup skim milk, warmed
  • 2 tablespoons prepared pesto
  • 1/8 teaspoon black pepper


  1. Place potatoes in large saucepan; cover with cold water. Cover and bring to a boil; reduce heat and boil gently 10minute or until tender. 
  2. Drain potatoes, return to pan and place over very low heat. Add warm milk, pesto and pepper; mash with potato masher.

Makes 4 servings.
