Salad with Herb and Mustard Dressing


  • 1 small red onion, cut into wedges, sautéed in olive oil
  • 2 cups whole green beans, cooked and chilled
  • 2 cups cubed red-skin potatoes, cooked and chilled
  • 1 cup halved cherry tomatoes
  • 1 (15½ -ounce) can Great Northern beans, drained and rinsed


  • ¼ cup water
  • 3 tablespoons balsamic or apple cider vinegar
  • 1½ tablespoons Dijon-style mustard
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil leaves
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon dried rosemary
  • 1 small garlic clove, minced


  1. Place vegetables on platter – tomatoes in center, vegetables in groupings around the tomatoes. In small jar with lid, combine all ingredients; shake well. Drizzle over the vegetables on the platter.
