Shrimp Creole Stew
- 1 (16-ounce) bag frozen mixed vegetables such as broccoli, cauliflower and red peppers
- 1 (14½ -ounce) no-salt-added diced tomatoes
- 1½ cups raw small shrimp, shelled
- 1 teaspoon hot pepper sauce
- 1 teaspoon vegetable oil
- In large saucepan, combine all ingredients.
- Cover; bring to a boil. Reduce heat to medium-low; simmer 20 minutes or until shrimp turns opaque.
Makes 4 servings.
