Snow Peas with Apples and Ginger
- 2 teaspoons olive oil
- 2 tablespoons finely slivered peeled fresh ginger
- 3 cloves garlic, minced
- 1 lb. snow peas, strings removed
- 2 crisp red apples, unpeeled, cut into thin wedges
- Salt to taste
- Heat oil in large nonstick skillet over low heat. Add ginger and garlic, and cook until tender, about 2 minutes.
- Add snow peas, apples and salt to skillet and cook, stirring frequently, until peas are crisp-tender, about 7 minutes.
