Three-Fruit Crumble


  • 1 large apple such as Gala or Fuji, peeled, cored and cut into 1-inch pieces
  • 1 large ripe pear, peeled, cored and sliced into 1-inch pieces
  • ½ cup fresh cranberries
  • 1 tablespoon sugar or sugar substitute
  • 2 tablespoons apricot fruit spread
  • 1/8 teaspoon ground ginger
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon water
  • 1 teaspoon all-purpose flour
  • ¾ cup old-fashioned rolled oats
  • ¼ teaspoon ground cinnamon
  • 2 teaspoons packed brown sugar
  • 1 tablespoon butter or no-trans-fat margarine
  • 1/3 cup fat-free Greek yogurt
  • 1½ teaspoons granulated sugar
  • 1/8 teaspoon vanilla extract


  1. Preheat oven to 350 degrees. Coat an 8-inch baking dish with cooking spray. Set aside. 
  2. For the filling, combine apples, pears and cranberries, sugar substitute, fruit spread, ginger, cinnamon in bowl. Stir together 1 tablespoon water and flour in cup. Mix with the fruit. Spoon fruit mixture into baking dish.
  3. In small bowl stir together the oats, cinnamon and brown sugar. Add butter/margarine and mix with fingers to form crumbly mixture. Sprinkle over fruit. Bake for 40 minutes or until fruit is tender and topping is brown. Remove from oven. 
  4. Stir together the yogurt, sugar and vanilla. To serve, spoon fruit mixture into four dessert bowls. Top each serving with dollop of yogurt mixture.
