Vanilla Multigrain Waffles

Ingredients
- 1 cup low-fat buttermilk
- ¼ cup steel cut oats
- 1/3 cup all-purpose flour
- 1/3 cup whole wheat flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 egg
- 2 tablespoons packed brown sugar
- 1tablespoon vegetable oil
- 1 teaspoon vanilla
- Sugar-free maple syrup
- Assorted fresh berries
Directions
- Combine buttermilk and oats in large bowl; let stand 10 minutes. Spray waffle iron with nonstick cooking spray; preheat according to waffle iron directions.
- Combine all-purpose flour, whole wheat flour, baking powder, and baking soda in medium bowl; mix well.Whisk egg, brown sugar, oil and vanilla in small bowl until smooth and well blended. Stir into oat mixture. Add flour mixture; stir until smooth and well blended.
- Pour 2/3 cup batter into waffle iron; cook until steam stops escaping from around the edges and waffle is golden brown, about 5 minutes. Repeat with remaining batter. Serve with syrup and berries, if desired.
Makes 4 waffles.
