Vegetable Fried Rice
- 1 teaspoon vegetable oil
- 1½ cups small broccoli florets
- ½ cup chopped red bell pepper
- 2 cups chilled brown rice
- 1 tablespoon reduced-sodium soy sauce
- ½ cup shredded carrots
- Heat oil in wok or nonstick skillet over medium heat.
- Add broccoli and bell pepper. Cook and stir 3 minutes or until crisp-tender.
- Add rice and soy sauce. Cook and stir 2 minutes. Add carrots; heat through.
Makes 4 servings.
