Whole-Grain Blueberry Muffins

Ingredients

  • Vegetable cooking spray
  • 1 cup + 1 tablespoon white whole-wheat flour
  • ¼ cup wheat bran
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground allspice
  • 1/8 teaspoon salt (optional)
  • 1½ cups quick-cooking oats
  • 1 cup low-fat buttermilk
  • ½ cup sugar
  • ¼ cup canola oil
  • ¼ cup egg substitute or 1 egg
  • 1 tablespoon orange zest
  • 1 cup fresh blueberries

Directions

  1. Preheat oven to 350 degrees. Spray a 12-cup nonstick muffin pan with cooking spray.
  2. Whisk together 1 cup flour, bran, baking soda, cinnamon, allspice and salt in large bowl. Stir in oats.
  3. Whisk together buttermilk, sugar, oil, egg substitute and zest in medium bowl. Stir buttermilk mixture into flour mixture until just blended. Do not overmix.
  4. Toss blueberries with remaining flour and fold into batter. Spoon into muffin cups, filling each 2/3 full. Bake 18 minutes. Cool in pan for 5 minutes. Remove from pan; serve warm or let cool to room temperate. Makes 12 muffins.
