Whole Wheat Date Nut Bread


  • 1½ cups white wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ¾ cup low-fat buttermilk
  • 2/3 cup packed brown sugar
  • 3 tablespoons canola oil
  • 1 teaspoon grated lemon peel  
  • 1 egg
  • ½ cup cut-up dates
  • ½ cup chopped walnuts


  1. Heat oven to 375 degrees. Coat bottom of 8x4-inch loaf pan with cooking spray.
  2. In medium bowl whisk together flour, baking powder, salt and baking soda. 3. In large bowl, stir together buttermilk, brown sugar, oil, lemon peel and egg. Stir the flour mixture into the liquids and gently stir just until combined. Fold in dates and walnuts.
  3. Spoon batter into pan. Bake 45-55 minutes or until toothpick inserted in center comes out clean.
  4. Cool 10 minutes. Using a knife, loosen the sides of the bread from the loaf pan. Set on cooling rack. Cool completely. Cut into 16 slices.
