Learn how to make Black Bean Sliders, one of Rita's recipes high in potassium.

Black Bean Sliders

  • 1 small clove garlic, minced finely
  • ½ cup finely chopped onion
  • 1 cup sliced mushrooms, preferably baby bella
  • 1 (15-ounce) can no-salt-added black beans, drained
  • ¼ cup quick-cooking oats
  • 2 tablespoons reduced-fat mayonnaise
  • ½ teaspoon crushed dried thyme
  • ¼ teaspoon black pepper

  • 2 tablespoons reduced-fat mayonnaise
  • 2 tablespoons fat-free Greek yogurt
  • 1 tablespoon minced fresh chives

  1. Coat non-stick skillet with cooking spray. Add garlic, onion and mushrooms. Cook over medium heat 5 minutes. Remove to blender bowl.
  2. Add beans, oats, mayonnaise, thyme and pepper to the blender. Process with on/off pulses until mixture is finely minced but not a paste.
  3. Remove black bean mixture from blender and shape into 8-10 small patties, about 2 inches in diameter. Place on large plate covered with waxed paper. Refrigerate 30 minutes.
  4. For sauce: in small bowl stir together mayonnaise, yogurt and chives. Set aside.
  5. Coat skillet with nonstick cooking spray. Arrange burgers in single layer in skillet. Cook over medium-high heat 5 minutes on first side; turn over gently. Cook additional 3-5 minutes on second side or until browned. Remove from skillet and serve on whole wheat slider bun with chive sauce.

Makes 8-10 small burgers.
