Bran-Flaxseed Muffins


  • Vegetable oil cooking spray
  • 1½ cups all-purpose flour
  • ¾ cup ground flaxseed
  • ¾ cup oat bran
  • 1 cup brown sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • Pinch nutmeg
  • ¾ cup skim milk
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons extra virgin olive oil
  • 2 cups shredded carrots
  • 2 apples, peeled, shredded
  • ½ cup raisins or other dried fruit
  • 1 cup chopped mixed nuts


  1. Preheat oven to 350 degrees. Grease 12-cup muffin pan with cooking spray or line with paper muffin liners.
  2. In a large bowl, mix together flour, flaxseed, oat bran, brown sugar, baking soda, baking powder, salt, cinnamon and nutmeg. In another bowl whisk together the milk, eggs, vanilla and oil. Pour into flour mixture and mix until just blended. Stir in the carrots, apples, raisins and nuts.
  3. Fill prepared muffin cups 2/3 full with batter.
  4. Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let sit a few minutes in muffin pan before removing to cooling rack.
