Carrot Raisin Salad


  • 2-3 medium fresh carrots, shredded
  • ¼ cup raisins
  • ¼ cup canned crushed pineapple, drained
  • 1 tablespoon plain fat-free yogurt
  • 4 lettuce leaves


  1. Combine all ingredients, except lettuce in large bowl.
  2. Refrigerate for 2 hours and stir occasionally. Serve on lettuce leaves.
