Carrot Sunshine Salad


  • 2 cups shredded fresh carrots
  • ½ cup crushed pineapple, packed in juice
  • ¼ cup raisins
  • ½ cup low-fat vanilla yogurt


  1. In serving bowl toss together the carrots, pineapple and raisins.
  2. Add yogurt and stir to blend. Chill in the refrigerator until serving time.

Makes 3 servings.
