Carrot Sunshine Salad
- 2 cups shredded fresh carrots
- ½ cup crushed pineapple, packed in juice
- ¼ cup raisins
- ½ cup low-fat vanilla yogurt
- In serving bowl toss together the carrots, pineapple and raisins.
- Add yogurt and stir to blend. Chill in the refrigerator until serving time.
Makes 3 servings.
