Cauliflower “Rice” Salad

Ingredients

  • 12 ounces cauliflower “rice” – found in the fresh produce section
  • 1 cup diced cucumber
  • 1 cup halved grape tomatoes
  • 3 green onions, thinly sliced
  • ¼ cup sliced olives

Dressing:

  • ¼ cup red wine vinegar
  • 2 tablespoons olive oil
  • ½ tablespoon Dijon mustard

Directions

  1. Combine all ingredients in salad bowl: cauliflower “rice, cucumbers, tomatoes, onions and olives.
  2. In small bowl whisk together the dressing ingredients. Pour dressing over salad. Toss gently to combine.
