Cauliflower “Rice” Salad
- 12 ounces cauliflower “rice” – found in the fresh produce section
- 1 cup diced cucumber
- 1 cup halved grape tomatoes
- 3 green onions, thinly sliced
- ¼ cup sliced olives
- ¼ cup red wine vinegar
- 2 tablespoons olive oil
- ½ tablespoon Dijon mustard
- Combine all ingredients in salad bowl: cauliflower “rice, cucumbers, tomatoes, onions and olives.
- In small bowl whisk together the dressing ingredients. Pour dressing over salad. Toss gently to combine.
