French Toast with Blueberry Sauce


  • Vegetable cooking spray
  • 2 tablespoons canola oil, divided
  • 1¼ cups egg substitutes or 5 eggs
  • ¼ cup fat-free milk
  • 1 teaspoon orange zest
  • 1 teaspoon vanilla extract
  • Whole-grain Italian bread, cut into 8 slices


  • 1 (6-ounce) container fat-free vanilla yogurt
  • 3 tablespoons apricot fruit spread
  • 1 teaspoon orange zest
  • 1 cup rinsed fresh blueberries


  1. Place large nonstick skillet over medium heat until hot. Coat skillet with cooking spray. Add 1 tablespoon canola oil; tilt skillet to coat the bottom.
  2. In small bowl whisk together egg substitutes, milk, zest and extract. Pour into baking pan. Add 4 slices bread; turn several times to coat the surface evenly. Place slices in the skillet. Cook 3 minutes per side or until golden brown. Place on plate in warm oven
  3. Place remaining canola oil in skillet; tilt to coat. Dip remaining slices of bread in egg mixture and place in skillet. Brown both sides; when done add to other cooked slices.
  4. Place yogurt, fruit spread and zest in blender. Puree until well blended.
  5. To serve, place 2 slices of French toast on each plate. Spoon equal amounts of yogurt sauce on each slice. Top with blueberries. Makes 4 servings.
