Fruit Granola

  • Vegetable cooking spray
  • 2 cups rolled oats, uncooked
  • 1/3 cup wheat germ
  • ½ cup almond slices
  • 2 teaspoons ground cinnamon
  • 1/8 teaspoon salt (optional)
  • ¼ cup canola oil
  • ¼ cup maple syrup
  • 1 tablespoon fat-free milk
  • 2 teaspoons vanilla extract
  • 1 cup dried cherries
  • 1 tablespoon orange zest

  1. Preheat oven to 300 degrees. Coat a baking sheet with cooking spray.
  2. In large bowl stir together oats, wheat germ, almonds and 1/8 teaspoon salt. In small bowl whisk together oil, syrup, milk and vanilla. Add to dry ingredients and stir to coat.
  3. Spread on baking sheet in a thin layer. Bake 25-30 minutes or until browned. Stir 2-3 times during the baking to break up any large pieces.
  4. Remove from oven. Stir in cherries and orange zest. Cool completely. Store in airtight container for up to 2 weeks. Makes 3 cups.
