Honey Zucchini Bread


  • 1 egg
  • ¾ cup honey
  • 3 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1½ cup whole wheat flour
  • 1½ teaspoon baking powder
  • 1 teaspoon grated orange peel
  • ½ teaspoon baking soda
  • ½ teaspoon ground ginger
  • 1½ cups grated zucchini
  • ½ cup sunflower seeds


  1. Preheat oven to 325 degrees. Beat egg slightly in large bowl. Add honey, oil and vanilla; mix well. 
  2. In medium bowl whisk together flours, baking powder, orange peel, baking soda, and ginger. Add the flour mixture, zucchini and sunflower seeds to honey mixture; mix well until blended.
  3. Coat a 9x5-inch loaf pan with cooking spray. Spoon batter evenly into pan. Bake for 1 hour or until a wooden pick inserted in the center comes out clean. Remove from pan and cool completely before slicing.

Makes 12 slices. 

Note: Double the recipe and freeze 1 loaf for later use.
