Hummus and Veggie Roll-Ups


  • 2 whole-grain flour tortilla
  • ½ cup hummus
  • ½ cup baby spinach leaves, sliced into strips
  • ¼ cup finely grated fresh carrots
  • ¼ cup thinly sliced roasted red peppers


  1. Spread hummus evenly between the two tortillas.
  2. Top the hummus with spinach leaves, carrots and roasted peppers.
  3. Roll-up tightly. Cut into halves and wrap tightly in plastic wrap. Keep in refrigerator until time to pack into lunch boxes.

Makes 2 servings.
