Mushroom Wild Rice (gluten-free)


  • 1 cup uncooked wild rice
  • ½ cup sliced fresh mushrooms
  • ½ cup diced sweet Vidalia onion
  • ½ cup diced green or red bell pepper
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1½ cups reduced-salt, gluten-free chicken broth, cider or water


  1. Layer rice, mushrooms, onion and peppers in slow cooker. Add oil, salt, pepper and broth or water/cider.
  2. Cover and cook on HIGH for 2½ hours or until rice is soft and liquid is absorbed. Makes 8 (½ cup) servings
