Quinoa-Kale Salad


  • 1cup red quinoa
  • 1 cup strawberries, trimmed and halved
  • 1 (5-ounce) package fresh baby kale
  • ½ cup vinaigrette dressing
  • ½ cup reduced-fat crumbled feta cheese


  1. Cook quinoa in boiling water according to package directions. Drain and cool completely.
  2. Place kale and cooled quinoa in salad bowl. Add dressing and toss to combine. Top with the feta cheese before serving.
