- 1cup red quinoa
- 1 cup strawberries, trimmed and halved
- 1 (5-ounce) package fresh baby kale
- ½ cup vinaigrette dressing
- ½ cup reduced-fat crumbled feta cheese
- Cook quinoa in boiling water according to package directions. Drain and cool completely.
- Place kale and cooled quinoa in salad bowl. Add dressing and toss to combine. Top with the feta cheese before serving.
