Spring Greens with Blueberries, Walnuts and Feta Cheese

Ingredients

  • 1 tablespoon canola oil
  • 1 tablespoon white wine vinegar
  • 2 teaspoons ground mustard
  • ½ teaspoon black pepper
  • 5 cups mixed spring greens
  • 1 cup fresh berries
  • ½ cup reduced-fat crumbled feta cheese
  • ¼ cup chopped walnuts or pecans, toasted

Directions

  1. Combine oil, vinegar, mustard and pepper in large bowl; whisk well.
  2. Add greens and berries; toss well.
  3. Divide among four serving plates. Top with cheese and walnuts.

Makes 4 servings.
