Spring Greens with Blueberries, Walnuts and Feta Cheese
- 1 tablespoon canola oil
- 1 tablespoon white wine vinegar
- 2 teaspoons ground mustard
- ½ teaspoon black pepper
- 5 cups mixed spring greens
- 1 cup fresh berries
- ½ cup reduced-fat crumbled feta cheese
- ¼ cup chopped walnuts or pecans, toasted
- Combine oil, vinegar, mustard and pepper in large bowl; whisk well.
- Add greens and berries; toss well.
- Divide among four serving plates. Top with cheese and walnuts.
Makes 4 servings.
