Three-Fruit Crumble

Ingredients
- 1 large apple such as Gala or Fuji, peeled, cored and cut into 1-inch pieces
- 1 large ripe pear, peeled, cored and sliced into 1-inch pieces
- ½ cup fresh cranberries
- 1 tablespoon sugar or sugar substitute
- 2 tablespoons apricot fruit spread
- 1/8 teaspoon ground ginger
- ¼ teaspoon ground cinnamon
- 1 tablespoon water
- 1 teaspoon all-purpose flour
- ¾ cup old-fashioned rolled oats
- ¼ teaspoon ground cinnamon
- 2 teaspoons packed brown sugar
- 1 tablespoon butter or no-trans-fat margarine
- 1/3 cup fat-free Greek yogurt
- 1½ teaspoons granulated sugar
- 1/8 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees. Coat an 8-inch baking dish with cooking spray. Set aside.
- For the filling, combine apples, pears and cranberries, sugar substitute, fruit spread, ginger, cinnamon in bowl. Stir together 1 tablespoon water and flour in cup. Mix with the fruit. Spoon fruit mixture into baking dish.
- In small bowl stir together the oats, cinnamon and brown sugar. Add butter/margarine and mix with fingers to form crumbly mixture. Sprinkle over fruit. Bake for 40 minutes or until fruit is tender and topping is brown. Remove from oven.
- Stir together the yogurt, sugar and vanilla. To serve, spoon fruit mixture into four dessert bowls. Top each serving with dollop of yogurt mixture.
Makes 4 servings.
