Turkey Minestrone Soup


  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • ½ cup chopped onion
  • 5 cups water
  • 2 cups no-salt beef broth
  • 2 cups shredded cabbage
  • 2 cups sliced fresh green beans
  • 1 cup diced carrots
  • 1 cup diced zucchini
  • 1 (16-ounce) can no-salt-added canned diced tomatoes
  • ¼ teaspoon garlic powder
  • 1 teaspoon basil leaves
  • ¼ cup snipped parsley
  • Black pepper to taste


  1. Heat olive oil in Dutch oven. Crumble ground turkey into Dutch oven. Add onion. Cook over medium heat until turkey is cooked and onion is tender. Drain.
  2. Stir in water, beef broth, cabbage, green beans, carrots, zucchini, tomatoes, garlic powder and basil. Bring mixture to a boil. Reduce heat and simmer 15 minutes until vegetable are tender.
  3. Stir in parsley. Simmer until beans are cooked.
