Vanilla Multigrain Waffles


  • 1 cup low-fat buttermilk
  • ¼ cup steel cut oats
  • 1/3 cup all-purpose flour
  • 1/3 cup whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 egg
  • 2 tablespoons packed brown sugar
  • 1tablespoon vegetable oil
  • 1 teaspoon vanilla
  • Sugar-free maple syrup
  • Assorted fresh berries


  1. Combine buttermilk and oats in large bowl; let stand 10 minutes. Spray waffle iron with nonstick cooking spray; preheat according to waffle iron directions.
  2. Combine all-purpose flour, whole wheat flour, baking powder, and baking soda in medium bowl; mix well.Whisk egg, brown sugar, oil and vanilla in small bowl until smooth and well blended. Stir into oat mixture. Add flour mixture; stir until smooth and well blended.
  3. Pour 2/3 cup batter into waffle iron; cook until steam stops escaping from around the edges and waffle is golden brown, about 5 minutes. Repeat with remaining batter. Serve with syrup and berries, if desired.

Makes 4 waffles.
