Vegetable Fried Rice


  • 1 teaspoon vegetable oil
  • 1½ cups small broccoli florets
  • ½ cup chopped red bell pepper
  • 2 cups chilled brown rice
  • 1 tablespoon reduced-sodium soy sauce
  • ½ cup shredded carrots


  1. Heat oil in wok or nonstick skillet over medium heat.
  2. Add broccoli and bell pepper. Cook and stir 3 minutes or until crisp-tender.
  3. Add rice and soy sauce. Cook and stir 2 minutes. Add carrots; heat through.

Makes 4 servings.
